Ingredients

  • 2½ pounds peeled yuca
  • ¾ pound seasoned ground beef or 8 ounces queso costeño
  • ½ cup hogao
  • ½ teaspoon cumin
  • 1 tablespoon cornstarch if needed
  • salt and frying oil

Instructions

    Boil the yuca in salted water until completely tender.

    Remove the central woody fibers and mash or grind the yuca while warm until smooth.

    Cook ground beef with hogao and cumin until dry; cool.

    With oiled hands, flatten a portion of yuca, add filling, and shape it into a sealed torpedo.

    If the dough is very wet, knead in a little cornstarch.

    Chill 20 minutes, then fry at 350°F/175°C until deeply golden, approximately 4–5 minutes.
