Cartagena's luxurious seafood stew — a rich coconut milk broth loaded with shrimp, lobster, crab, and fish, seasoned with the aromatics of the Caribbean coast.
Reduce coconut milk with hogao, sweet pepper, and achiote for 12–15 minutes.
Season shrimp with lime, salt, and pepper and add them to the bubbling sauce.
Cook for 3–5 minutes until just opaque.
Remove from the heat immediately to prevent toughening.
Finish with herbs and serve with plain rice, coconut rice, or patacones.
