Fish Sancocho
A lighter, coastal sancocho made with fresh river or sea fish, yuca, plantain, and the aromatic sofrito of the Caribbean coast.
Use the same method as mojarra frita with four cleaned red snappers.
Because snapper is often thicker, fry for approximately 7–9 minutes per side, depending on size.
Keep the oil close to 365°F/185°C and verify that the flesh beside the backbone reaches 145°F/63°C.
Serve with lime, salad, patacones, and arroz con coco.
