Peel the yuca deeply, removing the pinkish layer beneath the skin.
Cut into sections and boil in salted water until tender and beginning to split, 20–30 minutes.
Remove the fibrous central core and cut the flesh into batons.
Cool and dry thoroughly.
Fry at 375°F/190°C for 3–5 minutes until crisp and golden.
Salt immediately.
