Colombian Cuisine Deserves Better
Colombian cuisine is one of the most diverse, complex, and underrepresented food cultures in the world. While Mexican, Peruvian, and Brazilian cuisines have found global audiences, Colombian food remains largely unknown outside Colombia — reduced to Bandeja Paisa and Arepas in the few places it appears.
Colombia by Fire was created to change that. We believe Colombian cuisine deserves the same depth of documentation, cultural context, and culinary respect as any great food tradition. Our goal is to create the most comprehensive, accurate, and beautifully presented guide to Colombian cooking available in English.
Every recipe on this site has been researched against primary sources — Colombian cookbooks, regional food historians, and home cooks from each region. We acknowledge regional variations, historical context, and the ongoing evolution of these dishes. We do not simplify or Americanize.
